NCFE Level 2 Food and Cookery is an option in the Health, Sport and Nutrition block in Key Stage 4. Students will study 4 units over 3 years; preparing to cook, understanding food, plan and produce dishes in response to a brief and exploring balanced diets. Three of these units are internally assessed through coursework and the latter unit is an externally assessed exam which students will sit in year 10.  

Year 9

Students start with Unit 1: Preparing to Cook. This unit aims to introduce students to the safe and hygienic preparation of the cooking environment and ingredients. They will understand the importance of how to prepare and store equipment and utensils. Students will complete 2 theory lessons and 2 practical cooking lessons every 2 weeks and will learn to understand and follow recipes to demonstrate their cooking skills to produce a variety of dishes. Towards the end of the year students will start Unit 3: Exploring balanced diets to prepare them for their exam in year 10.

Year 10

Students will continue with Unit 3 and will understand the individual requirements of a balanced diet. They will learn about reference index (RI)/guideline daily amounts (GDAs) and how food labels can inform healthy eating. During their practical lessons students will understand how to change recipes to make them healthier. Towards the end of the year students will start Unit 2: Understanding food which provides students with an understanding of food sources and the factors that can affect food choices.

Year 11

Students will complete Unit 2 and start Unit 4: Plan and produce dishes in response to a brief. This unit will give learners the opportunity to bring together their learning and skills developed throughout the course to produce a menu in response to a brief. Students will plan, make and review their completed dishes.

Careers and Further study

This qualification is designed for learners with an interest in food and cookery. It will provide learners with experience of using different cooking techniques and methods to enable them to use these within further education or apprenticeships. It will give them a basic understanding of the skills required for a career in food.
